In Anakin's limited experience, maiming was just a very slow way of killing - maimed people couldn't work, people who couldn't work starved to death or died from dehydration first. Not because no one cared, but because no one had enough to share, except people who wouldn't do so anyway. Still, he wilts a little, violence is just part of what he's known.
